Bajan Fish Cakes

To get the most authentic Bajan fish cakes, go to Barbados. Find the fish market at Cheapside. Nearby there will be a little old lady selling fish cakes from a cart. Those are the best. To find the second best, walk across the street to the Cheapside bus terminal. On the street where the buses leave, walk north until you find a local bar called "De Port Hole". At lunch, they will have a buffet of Bajan food. Look for the fish cakes.

Or you can pay outrageously high prices and go to a tourist spot. But why would you do that?

Swampy's (almost) Bajan Fish Cakes

1/2 lb cod or other white fish
1/2 t  ground thyme
1 c flour (all purpose)
1/2 t salt
1 egg, beaten
1 t baking powder

oil for deep frying

Poach fish until it is cooked through. Reserve water. Put fish into a bowl and break it with your hands until it is in small shreds. Let cool.

Sift flour, salt, baking powder, and thyme.

Combine beaten egg and fish. Then add flour. Then add reserved water until a dough forms, being careful not to overstir.

Drop by tablespoons into oil at 300 degrees. Cook until done.

Sauces:

1. Combine mustard and hot pepper, or buy it on the island. The best without a doubt is S Bend sauce.
2. Mix ketchup and a little ground ceyenne pepper.
3. French dressing and ceyenne pepper. Swampy thinks this is disgusting, but many people like it.


Finally, Bajans use salt cod for their recipe, you can do that, but you have to soak it and wash the salt off.
