Best way to preserve fresh herbs

Best way to preserve fresh herbs

My herb garden is having a bumper crop this year.  What is the best way to preserve these?  Drying?  If this is it, what's the best method?  Low temp oven or in the sun?  How about freezing?  The herbs in question are oregano, rosemary and basil.  The others are dutifully committing suicide before they die at my terribly non green thumbs.

some you can freeze. basil they say freezes well. another option with basil is to just make pesto. that freezes well too.  

you need to dry the oregano and rosemary though,  not freeze them.  

I've dried mine in a dehydrator. just remember to do it for short time on low. makes the house smell terrific too. I over dried mine the first time I did it.  

you also can just lay them on cookie drying racks in a room, shut the door and forget about them for a few weeks.   those drying racks allow lots of air to get through and work well for herbs and peppers too.

I love my fresh herb garden :) even weeding it is pleasurable since you can smell all the herbs while you do it!

Most herbs can be dried easily. Cut big branch's/ sections or the whole plant at the base. Then hang them from the cut end in cool, dry place preferably with some air flow, I do this in the garage using string . Leave them for a few weeks depending on the size and they should be nice and dry. Then pick and put into jars and store as usual.

If you like gadgets they sell cool food dryers.

But otherwise, you just need a non-humid place with some airflow.

Swampy's herb garden is doing well too, especially the oregano. Swampy expects it to become self-aware soon.

Thank you all!!  I don't own a dehydrator so I think I'll try JHuxlet's advice.  That I can do.  I've dried flowers that way before so I know I can manage this.  I'd better hurry before they decide to commit suicide prior to their demise at my hands.
