Easy Chicken with Garlic-Lime Sauce

I have not tried this...its from Cooking Light.  You could snazzy this up a lot of different ways.   But as written, it seems like a simple, low carb recipe that would be good if time were limited.  Serve with corn on the cob and a salad to round out the meal nicely.

4 (6 oz) boneless skinless breast halves
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 T olive oil
1 T butter or margarine
4 garlic cloves, thinly sliced
3/4 cup fat free chicken broth
2 tsp fresh lime juice
1 T minced fresh cilantro
4 lime wedges

1.  Place each chicken breast between 2 sheets of plastic wrap and pound them to 1/2 inch thickness.  Sprinkle each with salt and pepper

2.  Heat oil in a large nonstick pan over med heat.  Add chicken and cook 6 min per side or until done.  Remove chicken from pan; keep warm.

3.  Melt butter in the pan over med-low heat.  Add garlic; cook 1 min (do  not brown).  Add broth; bring to a boil, scraping pan to loosen browned bits.  
Cook until the broth mixture is reduced to about 1/2 cup (approx 4 min).  Remove from heat, and stir in lime juice.  Serve sauce over chicken; sprinkle with cilantro.  Serve with lime wedges.

Serves 4

Per serving:  Cals--253  Fat 8.5 gm,  Protein 40.1 gm,  Carb 1.6 gm,  Fiber--0.1 gm   WW points--6

I adore simple recipes where I have everything already.

I do miss Swampy telling me that chickens love to scratch and play, though.

I'm having it tonight.  Was the sauce too thin?  I figure that its Core, even with the butter or margarine...too little to make it even 1 point for us, considering when you divide it into servings.

Yes, it was thin, but yummy!

You could always add a pinch of flour or cornstarch if you want to thicken it.

We loved this!  The amount of sauce and thinness worked perfectly for us.  I served with some cumin infused basmati rice and a divine squash recipe that I will post tomorrow!

Oh, I forgot to update this:  We liked it very much.  I did make a little cornstarch slurry to thicken it, but it thickened it a bit too much.  I tried to thin it down then with more chicken broth.

Next time, I'll leave it alone.  I used minced garlic instead of sliced.
