Easy Hummus

Easy Hummus

Ranae asked me to post my recipe.  I like it very garlicky.

8 large garlic cloves, minced and mashed
2 15 ox. cans of garbanzo beans (chickpeas), drained and rinsed
            OR equivalent of dried, 8 hour soaked and 1 hour boiled
1/3 cup of tahini (the original recipe called for 2/3 cup but I prefer less)
1/3 cup lemon juice
1/2 cup water
1/4 cup olive oil
1/2 tsp. salt

In a food processor, combine the mashed garlic, chickpeas, tahini, lemon juice, 1/2 cup water, and olive oil.  Process until smooth.  Add salt, starting at a half a tsp. to taste.  

Serve with pitas, crackers, vegetables or use on sandwiches or in wraps.  I like to put a bit of hot sauce on top.

I love hummus, but its a huge trigger food for me.  I like to SAY i'll use it as a sandwich spread, or with veggies, but truth be told...I abuse it.  I have been known to eat massive quantities at one sitting.

Trudie, It should come as no surprise that I make hummus much the same way.  I'd said I make it about once a month, give or take.  It's a great staple for me.  

I too skimp on the tahini, but can't leave it out altogether as some fat free recipes attempt.  It's just not the same!  I usually pan fry the garlic in oil first, I'm not huge on raw garlic.

For dipping, I like to cut up pita, use a little bit of pan spray or a very light brushing of olive oil, and sprinkle on some spices (like smoked paprika, or garam marsala, or whatever strikes me) and toast them up.  Sturdier, toasted pita can hold more hummus.

you can also make your own tahini - it's really easy to do!!!  I make my own and then just keep it in the fridge.  You already are messing up the food processor anyways so making some tahini first isn't a big extra step really :)    also I have a meyers lemon olive oil that I use when I make hummus for some extra lemony flavor.


I'm so totally addicted right now to the pepperidge farm pretzel thins dipped in roasted red pepper hummus. Been too lazy to make my own hummus recently so I'm just buying it in the store.

Can you post your tahini recipe?  Do you buy your meyers lemon olive oil or make that?  Sounds divine!

I bought my meyers lemon olive oil - I've seen it on the shelves at wegman's even but I bought mine online. My attempts at home at making flavored olive oils in general have tanked...lol.  

The tahini is just sesame seeds and olive oil blended together to make a paste.  I don't really use a recipe - just throw in sesame seeds that look like enough for what I want to make and turn on the food processor and add oil until it looks thin enough.  I had googled it and that's what most recipes were for it so I just started making it myself when I couldn't find it in any local store at the time.
