General Tso's Tofu.

I love Chinese food, and this sounds very good, and different.   From recipezaar.


SERVES 4

1 (16 ounce) box firm tofu
1 egg
3/4 cup cornstarch
vegetable oil (for frying)
3 chopped green onions
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
2 tablespoons soy sauce
4 tablespoons sugar
red pepper flakes
1 tablespoon sherry wine (optional)
1 tablespoon white vinegar
steamed broccoli


Drain, dry and cut tofu into one inch chunks-You can freeze the tofu the night before to get a more"chicken-like" texture, if desired.
Mix egg with 3 Tbs of water.
Dip tofu in mixture.
Sprinkle cornstarch over tofu to completely cover.
Heat oil in pan and fry tofu pieces until golden brown and set aside.
Drain oil.
Heat 3 Tbs vegetable oil in pan on medium heat and add onions, ginger and garlic, cook for about two minutes (be careful not to burn garlic).
Add vegetable stock, soy sauce, sugar, red pepper flakes and vinegar.
Mix 2 Tbs of water and 1 Tbs cornstarch and pour into mixture, stirring well.
Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.

Made this last night.  In a surprising turn of events....Mr. Peek liked it....nay, LOVED it, while I was all "eh" about it.

It took up more time than you'd think.  The tofu, even when coated with egg and cornstarch, soaked up a TON of oil, and I'd have to think that this would repudiate the posted calorie count.  

After I cooked it, I steeled myself for the bellow of "WHAT THE H*LL IS THIS SH*T" that usually accompanies any recognizable form of tofu.  But no, he actually enjoyed it, and asked for some to take to work tomorrow.

As this was just prior to my finding out a secret about him that will be revealed at some later date, I gladly packed up the leftovers for him to take.  And packed a spork, too.  Bamboo.  

It was a bit too sweet for me, just a bit.  And more work than it was really worth, taste and calorie-wise.

Will probably not be a keeper, especially not now that I know that Mr. Peek liked it.

If Peek didn't love it, it's off my list to try. Especially since Mr. Peek liked it and he's not on my good list at the moment.
