Ground beef Curry

A very easy, very mild curry dish from Recipezaar.  You could easily use lentils in place of the ground beef for a vegetarian dish, just skip the browning the meat part of the recipe.

I doubled the curry, and almost doubled the cinnamon, and it was still pretty mild for me.  

2 T oil
1 onion, diced
1 lb extra lean ground beef
1/2 T curry powder
5 garlic cloves, crushed
1 T gingerroot, crushed (you could easily leave this out)
3 med tomatoes, diced
1 T tomato paste
1/2 tsp ground cinnamon
1 T cilantro, chopped
1/2 cup water
(I added some cayenne pepper, and salt)

1.  In a skilet, heat oil over med high heat.  Saute onion and beef until browned.   Drain fat.

2.  Add in curry powder, garlic, ginger, tomatos, and saute briefly.

3.  Stir in the rest of the ingredients.  Turn down heat to med and cook for 20 min to blend flavors.

Serve over rice.

Sounds good and can definitely see doubling up on the curry.  Nice and inexpensive for these times!

I made this for dinner tonight. Yummy, yummy!

I didn't have the ground beef or ginger root, so I did w/o the ginger and used lentils.
