This is a lightened up version of the classic recipe. The classic recipe per serving: 276 calories, 12 g. fat. This lightened up version per serving has: 200 calories, 4 g. fat.
Halloween Pumpkin Bread
1 1/2 cups all purpose flour
1 1/2 tsp. ground gingerGinger Ginger root 1 1/2 tsp. ground cinnamon
1 tsp. baking soda
3/4 tsp. salt
1/4 tsp. baking powder
1 cup light brown sugar
3 egg whites
1 1/4 tsp. vanilla extract
1 cup canned pumpkin puree
1/4 cup buttermilk
3 Tbs. oil
2/3 cup confectioners' sugar

Preheat oven to 350 degrees. Coat 8 1/2 x 4 1/2 loaf pan with cooking spray. Combine flour, gingerGinger Ginger root, cinnamon, baking soda, salt and baking powder: reserve. On mediumMedium chain triglycerides speed, beat brown sugar, egg whites, and 1 tsp. vanilla. Beat in pumpkin puree, buttermilk and oil until smooth. Gradually beat in flour mixture until combined: pour into pan. Bake 50-55 minutes or until toothpick inserted in center comes out clean. Cool on rack 15 minutes. Remove from pan; cool completely on rack. Combine confectioners' sugar, 2 1/2-3 tsp. water and remaining vanilla until glaze is very thick but still pourable; spoon glaze over bread: let set. If desired, with decorating icing, pipe on a spiderweb and add candy decorations.
