I haven't made most of these. But they sound worthy of a try! Play around with them, add whatever you think sounds good. But keep it healthy! That's the whole point, anyway.
VEGETABLE BEEF STEW.
2 T FF beef broth
1 # beef stew meat, cut into 1" pieces
2 T flour
2-1/4 cup peeled and cubed taters
2 cups sliced carrots
1 cup sliced celery
1/2 cup chopped onion
2 tsp instant beef boullion granules
1-1/2 tsp minced garlic
1-1/2 tsp dried italian seasoning
2-1/2 cups V8 juice
Spray large nonstick skillet with Pam. Add broth and heat over med-high heat. Roll stew meat in flour to coat and cook in skillet, stirring often, until brown on all sides.
Spray inside of slow cooker with Pam. Layer potatoes, carrots, celery, and onion in cooker; sprinkle with boullion granules, minced garlic, and Italian seasoning. Add meat and V8 juice. Cover and cook on low heat for 7-8 hours, or high for 3-4 hours.
1 # extra lean ground beef
3/4 cup yellow cornmeal
3/4 cup skim milk
3/4 cup FF half and half
1/4 cup egg substitute
One 1.25 oz Chili seasoning packet
1 tsp Mrs. Dash
One 14.5 oz can petite cut tomatoes with diced chilies DO NOT DRAIN
One 16 oz can whole kernal corn, drained
1-1/4 FF shredded cheddar cheese (I would use lowfat cheese, personally. It melts better)
Spray large nonstick skillet with Pam. Add ground beef and brown. Drain well.
Combine cornmeal, milk, half and half, and egg substitute in a large bowl and mix well. Add meat, chili seasoning packet, Mrs. Dash, undrained tomaoes, and corn.
Spray slow cooker with Pam. Pour everything into your slow cooker and cook on high for 3-4 hours. Supposedly it doesn't turn out well on LOW, so don't try using that. Sprinkle cheese on top; cover and cook 10 min longer.
