Low Sodium

I am in need to some tasty low sodium recipes that have been tried and had lots of flavor.  My boss is having some heart issues and swelling issues, and I am going to try to have him lunch here everyday so we can feed him healthy stuff!  Any suggestions?  Crock pot 4 hour recipes would be great!

I don't have anything specific but suggest you look for recipes that contain (or modify to contain) lemon, use wine or beer in a stew or braise as it adds lots of flavor without the salt and has much less sodium than using stock, use the dash spice mixes, only use healthy oils like canola or olive oil, brown any meat in a very small amount of healthy oil beforehand as the browning adds a lot of flavor.  If you make soup make your own stock or buy low sodium.  Chili is a good thing if you use lean meat (if you search this community I posted a white bean and chicken chili that is great) and the cumin, oregano and chili powder help mask the lack of salt.  There are lots of good soups on here too.

I totally 2nd trudie's recommendations - fresh herbs and spices are terrific ways to add flavor without sodium.  Making from scratch instead of out of a can usually is much healthier too :)

I believe the american heart association's website has recipes and suggestions in too as well as they have several cookbooks out too.

Soups make well in crock pots and you just skip the salt when you make them and use the low sodium broths that trudie suggested.
