My Mother Cooked This & Now I Do, Tuna Patties

Tuna Patties

The smell of these takes me back to my childhood. My mother used to make these with mac and cheese but now I eat them with a salad. I still give the kids the mac and cheese :)

2 cans of Albacore tuna packed in water, drained well
2 eggs
1/4 cup Parmesan cheese
1 Tbls parsley
1/2 cup bread crumbs
salt and pepper to taste
1/4 cup olive oil

Drain tuna well and use a fork to break it into small pieces.
Add eggs, cheese, parsley, salt and pepper. Mix well.
Add about 1/4 cup of bread crumbs and work in. When it holds together pretty well in your hand you know you used enough bread crumbs.
Use the remaining bread crumbs to bread the patties. You should have 5-6 when your done.
Heat oil on med-low, then turn it down to low-med and cook tuna patties till nicely browned then flip to the other side. About 4 min. on each side.
Drain on paper towel.

You can use regular tuna, I just don't care for it. I use homemade seasoned bread crumbs but you can use any kind you want. You can use canola oil or olive it doesn't matter. The bread crumb amounts very. I would add a little at a time till you get the right consistency. They will not be dry and yet they won't fall apart if your a little careful. Make sure after you get the oil up to temp you turn it down a little. These brown quickly and you need to cook them for a few minutes on each side to get the egg cooked.

These sound delicious and another good way to eat Tuna, my Mom used to make fish cakes  ,sometimes used canned salmon,and mashed potato,  I am going to try this recipe out this weekend maybe serve with some peas or other veg ...

I actually made these last night and had some salad with them,  its been so hot here, they were well received by the DH who wanted more ...thanks for a good healthy recipe ..

This is very similar to something Swampy makes, except he uses poached cod (or other white fish). Then, after frying, use the oil to make marinara sauce. Serve over linguine.

So now you have linguine, a great sauce, and fish cakes. What more could you want? Oh yeah, a little fresh bread...

Yeah, my mother lives pasta with tuna. I've never tried it.
