Pita Bread

Another one on my "To Try" list.  From recipezaar.  This got lots of great reviews, but be aware it doesn't make pockets...it seems more like a flatbread.  I'm putting the suggestions people made most often, in parenthesis

Ingredients:

3 cups flour (most people used 2 cups white, 1 cup wheat)
1 T nonfat dry milk powder (many people left this out)
6 T. olive oil
1 T instant yeast (some people used 1 pkt regular yeast)
1-2 tsp sugar
1-1/2 cups warm water

Directions:

1. Mix yeast, water, and sugar.  Set aside.
2.  In a large bowl, combine flour, milk powder, and salt
3. Pour oil and water into flour mixture and mix well (you might need to add more flour)
4.  Knead dough briefly, divide into 18 egg size balls
5. Place on a lightly floured surface, cover, and let rest for 15-30 min
6. Roll one ball out and cook in a dry skillet until large "bubbles" form.
7. Flip over and cook on the other side for a few minutes
8. Flatten it out if needed
9.  Keep warm (wrap in a towel) while cooking the rest of the bread
10. They freeze well
(many people rolled them out on parchement paper and said it made it easier to flip them into the pan.  Most people also said some of the flour dust started to burn in the pan, so wipe out pan frequently.  Some people baked these in a hot oven for a few minutes, turning once, and were pleased with the results too)

(a few people rolled them out, and froze them individually for later use before cooking them.  They seemed to cook up just as well doing that)

Swampy suggests if you enjoy making things like this you buy the cookbook "Flatbreads and Flavors" by Alford and Duguid. It is available from Amazon.

It is divided by ethnicity and includes the bread recipe, and everything that goes with the bread. The recipes vary widely in complexity.

I like to make homemade bread sometimes but everytime I think about making my own flatbread I just can't help but think it's just so much easier to pick up a pack from wegman's....he he he  am I lazy or what? lol

why don't you make me some and send it to me swampy? :D
