Thai Zucchini Recipe

I found this on recipezaar...I haven't tried it yet, but I'm going to some time in the next week.  It got really good reviews, so I'm hoping its good!

1 garlic clove, minced
1 teaspoon minced fresh ginger
1 pinch dried crushed red pepper flakes (I will probably add more, I like it spicy!)
2 teaspoons olive oil
1/3 cup finely chopped unsalted dry roasted peanuts
3 teaspoons chicken broth
3 teaspoons rice vinegar
2 teaspoons soy sauce
1 pinch of sugar
3 medium zucchini, cut into very thin strips

Cook garlic, ginger, and red pepper flakes in olive oil in a large skillet over medium-high heat for 1 minute, stirring constantly.

Add peanuts and next 4 ingredients, stirring well.

Add zucchini, cook and stir constantly for about 5 minutes, or until crisp tender.

Serve immediately.

I noticed one reviewer said they doubled the sauce recipe and served it with cous cous.  I think I'm going to try it that way.

That sounds great! Plus I have all the ingredients ,,,,, - thats the best part when you don't have to hunt down the ingredients at the supermarket.
