Tilapia Escabeche

I have not tried this, but I intend to.

2 lemons
4 skinless tilapia fillets
2 different colored bell peppers, cut into 2 in strips
2 garlic cloves, cut into slivers
1 (16 oz jar) salsa (or use one of the homemade ones found here)
3/4 cup orange juice
3/4 tsp honey

1. Grate 1 tsp of the zest from 1 lemon and squeeze 2 T. of juice.  Cut the remaining lemon into 4 weges.  Set aside.
2. Spray a large nonstick pan with Pam and set over medium heat.  Add the fillets and cook just until opaque in the center, about 3 min each side.  Transfer to a plate.
3. Add the bell peppers and garlic to the skillet; cook, stirring frequently, until the bell peppers are crisp tender (about 5 min).  Stir in the salsa, OJ, honey and the reserved lemon zest and juice; bring to a simmer.  Cook, stirring occasionaly, until the peppers are tender (about 5 min).  Add the fillets and spoon the vegetables and sauce over the top.
Cook until the fillets are heated through, about 2 min longer.  Serve with the lemon wedges.

Per serving: (1 fillet w/2/3 cup sauce) 181 cals, 2 gm fat, 778 mg sod, 19 g carbs, 3 gm fiber, 24 gm protein.
