Tilapia with White Wine Caper Sauce

I've always wanted to cook with capers and never have.

I found this recipe and decided to go for it. I must say that this is the best tilapia recipe I've had.

Allrecipes

INGREDIENTS:

1/4 cup all purpose flour
1 1/2 pounds of tilapia fillets
1 tbsp evoo
Salt and pepper to taste
4 tbsp butter, divided
1/2 cup dry white wine
2 cloves garlic, minced
2 tbsp capers, drained

DIRECTIONS:

1. Place flour in shallow dish. Season fish with salt and pepper and dredge in flour. Heat oil and 2 tbsp of butter in a large skillet over medium-high heat. When butter starts to turn nutty brown, add fih; fry until golden brown, about 2-3 minutes on each side. Transfer fish to plates and cover to keep warm.

2. Add wine to the hot empty skillet and using a spatula, scrape any browned bits from the bottom. Let the wine reduce by half and then stir in the garlic, remaining butter and capers. Let sauce simmer for 1 to 2 minutes to blend the flavors. Pour a portion of sauce over each piece of fish and serve immediately.

I served this with Peek's Au Grautin Potatoes and roasted asparagus. Great meal!

Hmm....I have everything but the capers.  Fish, actually tilapia, was what I planned for tonight.

Good reminder! Swampy used to use capers all the time, but hasn't for a while. They are most excellent.

Peek, go get yourself some capers!

I probably would have chosen capers as a secret ingredient for Iron Chef, had I gotten the opportunity.

Capers are awesome!  I'd never tried them until I took a class making ratatouille that has them and what a difference they make!

I have a jar of capers in my cupboard and have been trying to figure out what to do with them...thanks!! This sounds fantastic!!

Trudie-I just "Rats-and-Tootie" as my 4 year old calls it. That boy will be my chef, he walks around imitating the chairman on Iron Chef all the time "a la cuisine!"

Capers would have been a swell choice, Nana.
