Well. let's see.  I too try to cook healthy.  Are you looking for ideas for dinner or lunch?  I've been having an avocado once a week mashed with lime juice and a bit of salsa with some salt free baked corn chips.  Tasty, easy to make and good for me.  

put lime juice on a lean chicken breast and then mix a cut mango, cilantro and lime juice to eat over it, serve with brown rice.  My husband likes that.  

I will eat a salad but put chopped hard boiled egg on it.  This makes if really filling.
