Veggies for Husband

I am so happy that my husband decided to start eating healthy in 2011. However, we have problems already. He is not a big veggie eater - only string beans, corn, peas, carrots, black beans and lima beans if mixed with other veggies. He is tired of the same old steamed veggies. Can anyone give me suggestions on how I can make veggies for him that are different, tasty but also healthy. Thanks everyone.

Oh jeez, my husband doesn't even like that much lol. We usually do corn, green beans, peas in things, sweet potatoes, and squash. I do a veggie soups that he'll eat. But my husband doesn't like much, like I keep wanting to try new things and he kinda just looks at me then looks at it then looks at me with this disgusted look on his face. I don't know what is in season or well priced in your area but squash is good and sweet potatoes. I'm pretty sure you can mash parsnips like you would potatoes too.

I agree with the soup suggestion. Also, if he likes pasta, you can make homemade sauces with lots of tomatoes, bell peppers, onions, etc. Or how about chilis?

Try roasting your vegetables.  Almost any vegetable can be tossed with a bit of olive oil, kosher salt, pepper and your favorite spice and roasted on a tray at 350 for 45 minutes.  Root vegetables can be made even better by adding a tbsp of maple syrup in the last 15 minutes and green vegetables are wonderful with some freshly grated parmesan and maybe a spritz of lemon juice.  The carmelization you get on the vegetables dramatically changes the flavor.

If it helps you could make a low fat cheese sauce.  Take a cup of low fat milk and quickly wisk in 2 tbsp white flour.  Add salt, pepper & maybe a dash of nutmeg.  Cook over medium heat whisking continuously until it thickens.  You can then add some low fat shredded cheddar or parmesan or even a cube or two of low fat laughing cow.

you can make quesadillas with beans in  - dip them in salsa to get even more veggies into him ! also the fajita style veggies like trudie mentioned are good in quesadillas too.

also try the bush's beans site for bean based recipes if he'll eat beans for you. beans are chock full of protein, iron and are low fat too.   lots of sides you can make with corn and beans!  broaden his horizons a little bit :)  

have you ever made asian style green beans at home?  like the kind you can buy in the deli for an arm and a leg or find on the chinese buffet?  really easy to make and something different from run of the mill green beans too.

stir fries are also yummy and if you make your own stir fry sauces, you can control the sodium and the fat a little more than what you get out of a bottle. they are usually pretty easy to make. use brown rice instead of white for some added fiber with them.

Peanut Sauce adds so much flavor to vegetables.  My husband as well as my sons always enjoyed this receipe.  You can add other vegetables and mix and match to tastes.

Ingredients:
•3 Tablespoons peanut butter
•1-1/2 cups water
•1 garlic clove, minced
•1 Tablespoon brown sugar
•1/4 teaspoon cayenne pepper
•1 Tablespoon lemon juice
•Salt to taste
•1 cup sliced cabbage
•1 cup diced green beans
•1 pound spinach, cleaned and trimmed
•1 cup bean sprouts

Combine the peanut butter, water, garlic, brown sugar, cayenne, and lemon juice in a saucepan. Bring to a boil, reduce heat and simmer for 2 minutes. Add salt and cool.

Boil the cabbage and beans in salted water to cover for 20 minutes. Add the spinach and simmer for 5 minutes. Add the bean sprouts and cook, stirring, for 1 minute. Drain.

Top with the sauce and serve immediately.

We usually doubled the receipe.  I think it this serves six.
