Artificial sweeteners are bad!
Finally people have joined the club and know artificial sweeter are bad. The study was done over 15 years ago. It's just the marketing was so big that the word didn't get out that these are bad.
The research showed that people who drank an artificial sweeter before a glucose tolerance test did worst then people who hadn't drank the artificial sweetener even though initially these sweeteners did not seem to increase glucose initially.
On the other had, research suggest that stevia (pure -- not the mixed stuff) is good. But look carefully on the ingredients, even the containers that say "pure stevia" have been cut with other sugar alcohols.

Also at first your glucometer is your go to tool. Test before a meal. Eat and enjoy. Test 2 hrs after to you eat and see what foods works for you.
For example, most people do great with beans some people have trouble with beans -- even though a lot of folks believe beans are good, it really depends on your metabolism. You'll only know with a trusted glucometer.

What works best is low carb, moderate protein and balance of calories from fats like olive oil, butter, avocado, coconut oil (stay away from margarine or high omega 6oils). Typical meal would look like green or non starchy veg with meat/fish/eggs and healthy fats. Stay away from starchy and sugary stuff like pasta, bread, rice, flour, etc. limit fruits to rare treat. Eat full fat dairy, and try to stay away from processed foods, especially the low fat or no fat variety, which are full of sugar, carbs and nasty chemicals. Eat whole real foods.
Re3commended diet is lower carb, moderate protein, and enough healthy fats that you don't feel hungry.
Unprocessed foods are best; plenty of non-starchy vegetables, nuts, meats, cheese, full fat unsweetened dairy, some fruits and grains (limit due to sugar /starch content), limit sweets, deserts, juices, sugars....... latest research also recommends avoiding artificial sweeteners..
