turkey chili serves 8
non stick cooking spray
1 tablespoon olive oil
1/2 cup chopped red onion
1 pound turkey cut into small bite size pieces
2 cloves garlic,minced
1 tablespoon chili powder
1 teaspoon salt
1/4 teaspoon sweet paprika
1/8 teaspoon pepper
1 15ounce can chopped tomatoes
1 26 ounce carton reduced fat low sodium chicken broth
1/2 cup red pepper puree
1/2 cup carrot puree
1/4 cup cornmeal
2 tablespoon flaxseed
1 15 ounce can kidney beans drained and rinsed
coat the bottom of a large pot with cooking spray and set over med heat. when the pot is hot ,add the olive oil add the onion and cook til it begins to soften, about 2 min
sprinkle the turkey with the garlic ,chili powder,salt,paprika, and pepper . add the turkey to the pot and cook stirring occasinally
stir in the tomatoes add the broth red pepper puree corneal and flaxseed stir bring t a boil reduce heat simmer for about 20 min to blend all flavors stir in beans and cook a little to heat through.
i make this meal after thanksgiving with left over turkey it freezes well too
