Hello, I am a Registered and Licensed Dietitian and I'm sure the Doctors will answer you the same but when you see the word "hydrogenated oil" in the ingredients list of a food, that means that some (maybe even all) of the
fattyXanthoma acids (mostly polyunsaturated) in the product have been changed into
transTrans-ver-sal fattyXanthoma acids through the process of hydrogenation. Oils are hydrogenated primarily to prevent spoilage and increase shelf life because fats have a tendancy to become rancid in certain conditions.
TransTrans-ver-sal fatty acids do commonly occurr in foods such as some breads and commercial products. The bottom line is to eat a low fat, varied diet including plenty of fruits and vegetables and grain products. Hope this helped.
