Hello, I am a Registered and Licensed Dietitian and I'm sure the Doctors will answer you the same but when you see the word "hydrogenated oil" in the ingredients list of a food, that means that some (maybe even all) of the fatty acids (mostly polyunsaturated) in the product have been changed into trans fatty acids through the process of hydrogenation.  Oils are hydrogenated primarily to prevent spoilage and increase shelf life because fats have a tendancy to become rancid in certain conditions.  Trans fatty acids do commonly occurr in foods such as some breads and commercial products.  The bottom line is to eat a low fat, varied diet including plenty of fruits and vegetables and grain products.  Hope this helped.

Thanks for the reinforcement Bob.  Lifestyle and diet changes are some of the toughest things for people to change (including doctors) and the work you are doing is invaluable.
