Need help with HSV questions.

I got tested 5 years ago when I found out an ex cheated on me. I tested positive for HSV 2, I don't know what the levels were, it was only a blood draw, there wasn't any lesions to swab and culture. I have never had any symptoms or outbreaks. I have read it is possible to have HSV 1 & 2 genitally and orally but without having outbreaks how am I supposed to know where I am shedding the virus?
If I've never had any outbreaks or symptoms am I asymptotically shedding as much as someone who does have outbreaks? I just started dating a man who doesn't have HSV and we are both worried about the risk of transfer. I have been taking an antiviral just to be extra cautious. Also, does anyone know about the risk of transfer with oral sex? Or, where I can find a reputable clinic/person/number to call and get questions.
