on my gf that lasted about 5 minutes, 2 to 3 hours later I noticed a cold sore beginning to start, what are the chances of me infecting her both orally and genitally?

This is a risk since odds are you were shedding the virus when you performed oral on her. At this point nothing to do though but just wait and if she notices any genital symptoms in the next 2-3 weeks, she should see her doctor within 48 hours of their appearance for a lesion culture , typing and treatment.
Thank you for your comment, she has not been tested and neither have I, but since I do have a cold sore I have to have it, I have had cold sores before in my life but I am not prone to getting them, Is the risk very high or very low that she will contract it genitally?
it all depends on if she already has it orally or not. If she has hsv1 orally, whether she gets obvious cold sores or not to know it, she has significant protection against contracting it genitally from you.
I know it's hard to wait and see but at this point, not really anything else you can do.
