I don't think any of the activities that you describe put you at a significant risk of getting HSV 2. As you probably know already, though, condoms are not 100% protective against getting herpes when having intercourse. The presence or absence of herpes lesions in her genital area is not as important as if she is just infected or not. If we assume for a moment, since she is professional sex worker that she is infected, as many are, then we should look both at the activities you participated in with her and the risk of getting infected at a single encounter.
Your finger in her vagina, even with a cut on your finger, is not high risk, though not zero risk, because of a bleeding cut. Her finger, your anus, even if she did use vaginal secretions as lubricant, is not any signficant risk. Touching you all over is not risky at all, sucking your nipples very limited risk if she has oral herpes. Rubbing against he butt crack with a condom on, not risky.
You don't mention how long ago this encounter was, specifically, but I think it would be good for you to get a baseline IgG antibody test now, to see if you may already be infected with either type of herpes. Then, when you repeat the test is 3-4 months, you will know, if you are positive at that time, if you were infected all along or just got newly infected. I find this helps patients a lot to put meaning to the infection experience. If you do that, you want IgG only, not IgM, ever.
I can't give you exact percentages of the risk of any of these behaviors, only an experienced guess at their risk.
