Is the onset of IC symtoms (symptoms) usually gradual, or can a person be perfectly fine one minute and then all of a sudden experience most of the symtoms (symptoms) of IC instantly?

Yes, IC can suddenly occur.  IC is often triggered by an injury to the wall of the bladder.  A bad UTI, surgery in the pelvis, childbirth,  injury during a hysterectomy can do it.  It is also true that many patients don't have a specific tramatic event, but suddenly get the symptoms "overnight"  Of course a UTI needs to be ruled out, and since IC is a chronic condition, you have to have the symptoms for at least 3 months with clear urine checks to be diagnosed by most experts.  If the symptoms occur suddenly then resolve as suddenly you probably don't have IC.  A urologist who specializes in female urology, or a urogynecologist needs to investigate your complaints.  Good Luck.
