Night Eating Syndrome to IBS?

I have been suffering with a number of symptoms over the last 15 months, all of which I will explain in here.

From around March 2009, I had been waking up every few days in the middle of the night, gorging on food and then going back to bed. Anything I could find. After about the 10th time I started getting extreme pains the next day. Although my Doctors was saying this was Gastroenteritis, thus being put on medication for this. I managed to curb this at the start of the year and after a vast amount of research i feel I had night eating syndrome.

Since around Feb I have been having an permanent bloating and pain in my stomach only, everytime I go to the doctors they say I have IBS and don't even want to give me further tests. I have however since obtained an ultrasound which did not discover anything.

I guess my question is, should I really be having this pain everyday? It is ruining my life and I need to get someone to take me seriously! Any help or advice?

Yep.  It seems that at night all the starvation we do from not feeling like eating catches up to us so the body tries to figure out a way to make up the lost nutrients.  At least that's how I think of it.  Try small snacking throughout the day to keep a level of food in stomach.  No big meals.  5 x a day small meals, ya know?  Helps with the pain/nauseous, and helps lose weight too.  I especially crave breads and sweets at night, so I know my blood sugar is low from the irregular eating.  I have also found exercise really does help.  Resistance training has decreased my pain bouts.  Nothing big, just 6-13 one set reps for 20 minutes 3 times a week.
