Am I maintaining my milk supply well?

My baby is two months old and I just started working again part time. I pump once at work every day, and get between two and three ounces. Is this enough? Also, do I really have to keep pumping and/or feeding every two to three hours to maintain my supply? (which has never been quite up to par)

I think it depends on how much your baby drinks.  Pumping is not a good indicator.  Your baby's ability to suck is better than any pump you get.  With that said, yes, you will need to pump every 2-3 hours to maintain your supply.  Mine went down when I first returned to work due to stress.  Keep up the pumping.  My son will be 6 months next week and I still pump 2-3 time a day in my office.  I even to home at lunch to nurse.  I can get 8 oz the first pumping session in the morning, then about 5-6 oz later on the day.

It is imperative that you are consistent with pumping.  I don't know what contributed to my milk drying up but I was inconsistent and I stopped breastfeeding when DD was 6 1/2 months old.  I tell everyone now that pump and breastfeed the baby as often as you possibly can to maintain your milk supply.
