OT -- Doing some sweet research

Today while out picking up some milk & bread I spotted some chocolate eclaires. I had not had any for years so I decided to pick some up. Oh were they good, I ate all 6 of them within a minute or two.

As usual my creative mind took off while eating them, (maybe sweet things start the creative properties of my mind). Anyway I was thinking how good they would be if they were Chocolate  Cheesecake Eclaires. I have a recipe for a really good cheesecake filling, but it would be a little too thick for an eclaire, but I think I can modify that recipe too thin out the filling to the right consistency.

But here is where I get into trouble. I have tons of recipes ( I am always collecting them), but not one is for the pastry or what ever it is called for eclaires. I have cream puff recipes, but a proper eclaire has a different whatever it is called. Does anybody know what the eclaire pastry is called?  Is it a doughnut batter? Cake batter? a different pastry batter?

Any help would be appreciated.

I have a good friend in Scotland who sent me some of the Cadbury éclairs for my birthday last year. Oh, boy, I loved them! And refused to share more then one with each of the kids LOL

The Herseys was going to be just for the taste test. Normally I would use the melted chocolate with corn syrup.

Everyone should make this pastry this weekend - it really is fairly simple to do and it impresses the heck out of everyone.  A favorite stuffing can be chicken salad or crab salad instead of sweets.

D- choux pastry is the same pastry used for cream puffs.  You just shape it differently.  

word of caution with the hershey's - it will be too thin to hold to the top.  You do need the thicker chocolate such as hot fudge.  OR take a bar of fine chocolate, melt in the microwave and stir in a very small amount of corn syrup to keep it supple.  Pour that over your eclair and you will be very happy.

Yes that was the name of the pastry I was looking for, but just could not remember it. Especially since it is pronounced nothing like it is spelled. For those not familiar with it it is pronounced "Shoo". One of these days I should get my recipes organized better. I have over 600,000 of them, though there are quite a few duplicates I'm sure.

  I go to Allrecipes all of the time when in a hurry to make something. It is quicker than searching my recipes. Most of the recipes I have gotten from there I have modified to make them even better.

Today I am going to make a small test batch of the Chocolate Cheesecake Eclairs. My first attemp will probably be as follows.

Filling:
1/4 cup sugar
4 oz of cream cheese
1/8 teaspoon of lemon.
1/2 cup of whip cream

For the chocolate I will just drizzle some Herseys chocolate sauce on top. This should give me a good idea of how good they will be. I suspect they will end up on my don't make again list as I will always sit down and eat the whole batch by myself in one sitting.

Oh wow I just had another thought. Instead of chocolate how about hot fudge topping to drizzle on it. Now my mouth is really watering.

Well I have to run to the store now and get the stuff I will need to try this out. I'll let you all know later how they were. Now where did I put my pastry piper?

Hi Dennis

In England the pastry for chocolate eclairs or profiteroles is called Choux pastry. I am sure you could find a recipe on the internet. When I started reading your post I thought  you were talking about sweets we have over here which are basically toffess filled with chocolate and I was trying to imagine where the cheesecake bit would fit it..but hten I read on and it became clear..

OK, I couldn't help it - I had to go to the Joy of Cooking cookbook for the ultimate answer! Yes, they are both made from the same pastry, it is just the shape that is different! So, there you have it! They sound yummy! I love eclairs and cream puffs!

  Thanks! I was thinking they were different because I remember the cream puff pastry was crispier. Maybe the chocolate on top of the eclairs me the crust softer?
