A recent Japanese study on rats has shown that vinegar showed biochemical evidence of improving muscle fatigue by stopping the breakdown of sugar (glucose) in muscles and promoting the production in the liver. I'm not sure if this can be projected to humans. The only thing that's well reported in the medical literature on vinegar and metabolism in general is its disulfuram (which is Antabuse) reaction in which it competes with the metabolism of alcohol, making you sick if you drink it. Hope this helps.
