Eggs & Cholesterol

Most low cholesterol diets severely limit egg yolk consumption.  But my daughter claims that each egg yolk contains enough lecithin to emulsify all the cholesterol in it.  Who's right?

The cholesterol in eggs is really good for us and does not have to limited as thought before. There are still older 'low cholesterol' diets around that limit egg and egg product consummation. The American Dietetic Association is now recommending a moderate low fat diet to help control cholesterol, which consists of polyunsaturated (omega 3 fats-nuts, eggs, oils of nuts, corn oils, margarines without trans-fat, etc) and monounsaturated fats (olive oils, peanut oil, canola oil, etc), no saturated fats or trans-fats. Research has proven that a moderate fat diet lowers blood cholesterol better then a strict low fat diet. Hope this answered your question.
