Seven year old daughter refuses to pee till it's almost too late.

I see a lot of posts about children who continue to have accidents( potty ) after the age of six. My daughter is seven and doesn't have accidents, she just outright refuses to admit that she needs the facilities until it is an out right emergency. Generally she makes it just in time and exclaims while peeing how much better she feels. Sometimes she  gets a little pee in her undies and needs a new pair and a bit of a clean-up. I can tell early-on that she needs to pee and sometimes suggest to her that she go to the bathroom or I ask her to please try at least. She almost always denies it. Sometimes she will begrudgingly go and then say Hey I did have to go, or hey you were right, or OK I admit it. I feel that part of it is a need to assert some control over some part of her life and I understand that, but I don't want her to get hurt(physically by retaining her urine, or emotionally by eventually peeing in front of a bunch of other kids and never being allowed to live it down.)

It sounds like your daughter is mostly doing ok and that you're going in the right direction. My daughter is 9 years old and she still has problems holding her pee in too long, not telling anyone about it, then having another accident. My daughter always denies there is a problem too, until the last minute when she has to go all of the sudden, and may or may not be able to make it to a bathroom before she pees herself again. I feel awful for her, but nothing I try seems to help her get control.

If your daughter is already able to handle this most of the time herself, thats a great sign and you should be proud.

I dont quite see your concern on this matter, perhaps let her be in control of her own bathroom habits , in focusing on it you may make her anxious .
