reheating meals - nutritious or not?

I usually prepare a healthy dinner by around 7pm, which can take me upto 2 hours sometimes. But when hubby comes home it's already 9pm and i have to reheat our dinner in the microwave before eating.

I sometimes also prepare extra quantity to have for lunch the next day. so i pack and store it in the fridge, and reheat it in the microwave the following day around 1pm.

Does the nutritional value reduce / disappear if meals are reheated in the microwave and consumed a day later? Am i still getting the full benefits of my healthy meal?   What do you beautiful ladies do for nutritious meals?

Heating in the microwave is no worse than reheating using any other method. But some nutrients are always lost when reheating food, especially vitamin C. You could always eat some raw vegetables high in vitamin C alongside your dinner though. Or eat some fresh berries as dessert.

interesting! i guess you're right that getting even half the nutritional value of healthy food is still better than take out.

do you think there could be a difference heating food in the microwave vs stove top?

i looked online, but most info is about optimal temperatures and stuff. but i really wanna know whether repeated heating and cooling of food damages the nutritional properties??

I do the same as you, except that when hubby gets home I turn the stove back on to reheat it instead of microwave. I believe that even if it loses a little bit of the nutritional value, it's still healthier and cheaper than ordering or eating out. I usually make s fresh salad too goo with it :)
