Fetish question.

I am a Male Dominant from Oxford. My girlfriend has a fantasy of me using her as a toilet. I would like to find out if this is safe if not publicly seen as 'correct'. It is a consentual relationship and she is interested but I do not wish to proceed unless I think it is safe. Then I will make a decision if it is something I wish to do.
Any help on this would be helpful.

I'm wary of letting this new forum drift into "sexology", relationship advice, etc, on which I am no expert.  But your question is health-related.

I'm not sure what specific practices you are thinking about, but I can say that oral or other exposure to urine carries no signficant risk beyond that associated with any sexual practice.  Oral exposure to feces carries greater risks, but probably also is usually safe in a mutually monogamous relatiolnship that remains that way.  But even so, some risk would remain, primarily for hepatitis, diarrheal disease and other enteric infections; either partner can be nonsexually exposed and unknowingly bring an infection into the relationship.

Actually, it has been known for someone to get gout from drinking excessive urine. Gout is more common in males and is caused by the buildup or uric (spelling?) acid,  which urine has much of (obviously). I would avoid her urinating in the mouth.
