Welcome to the Forum. You ask several questions. First I'll discuss you and your sore throat, then a comment about your wife.
There is little risk of acquiring any STD from performing oral sex on a partner, even if your partner has an STD and most women do not have an STD. The risk for acquiring an STD from performing oral sex on an infected female partner is low -lower than any other form of sexual contact. Furthermore, when STDs occur in the mouth they are typically asymptomatic. On the other hand, the most common cause of a sore throat is a viral infection.
As for your wife, there are many reasons for pain on intercourse. STDs are one cause but only one of many. Your wife should be examined by a gynecologist.
