Father in Law wont eat

My Father In Law had stroke 4 years ago. Affected left side of body, with difficulty walking, moiving left arm, swallowing and incontinent.
Collapsed 5 weeks ago with Pneumonia (from swallowing problems) and Urinary tract infection (from catheter). He has recovered from both of these but still in hospital keeps picking up new infections. Is also diabetic so poor immune system.
Currently has pneumonia again, is MRSA+ve on skin , and has C. difficile, which is a diarrhoea bug.
Hospital's main concern is that he wont eat very much, and they may have to put on an ng feed to ensure he gets food. They have asked us to help feed him as this often helps, but isnt working very well and is distressing for my wife and her Mother as he can be quite vocal in refusing the food.
He doesnt understand why it is so important to eat, and I dont think I would be eating much if I had his infections.

Does anyone have any ideas on how we can persuade him to eat more? Part of the problem is that, due to his swallowing problems, all food must be liquidised so doesnt look/taste that appealing. We have tried taking in food from home but doesnt want this either.

Thanks in advance for your help,

Ian
