Well for starters- everyone's metabolism is different. So perhaps you do have a good healthy metabolism. Mine is almost non-existent, however that is caused by my thyroid problems. So there are many health problems that may explain a lack of weight gain. Have you ever been told you need to gain weight? If you feel something is wrong, talk to your doctor. There are many serious things that can cause rapid weight loss or make it impossible to gain weight.
The other thing I would like to point out that gaining and loosing weight isn't so much about how many meals you're having or how much you're eating but what you're eating. For example I have never eaten breakfast until 2 years ago- when I first started loosing weight. I use to eat less food, less often- but the caloric intake was higher. Do you have any idea how many calories you average in a day? Are you getting plenty of protein, fats, and fiber? I suggest playing with the food tracker on here and adding a typical day. If you're only averaging 1500 calories, maybe you need more.
