Do I have Chronic Fatigue Syndrome?

Symptoms: Fatigue, weakness, Sore throat, stiff neck, loss of appetite, gets worse when I play soccer (need to rest up to 3 days after exercise)

I have had it for almost a year, just turned 17

I'm so sorry you're going through this with no answers. Have they checked your thyroid? If your TSH is above 3 you most likely have a slow thyroid which can cause all of your symptoms. A lot of labs will say you're fine if your number is below 5. If you did have this test and your number is anywhere around 5, or under, see a specialist. And Endocrinologist. They will not only check your TSH but also your FT3, FT4 and antibodies.
I really hope you can find out what's going on soon. I thought of your thyroid because of your symptoms and you mentioned your throat.

I have been tested for my iron and vitamin levels as well as mononucleosis.

Did they specifically check your iron and vitamin levels? Many times Drs will only check for infections unless you ask for specific blood tests.
Another thing I'm thinking of because of your symptoms is Mononucleosis. It's can last for months and months and cause the symptoms you're having. Do you know if your Dr checked you for that?

I have already done lots of blood tests, ct scan of my head, lung test, and heart test

See your Dr for testing. They will do blood work to see if you're low on iron or any vitamins if you tell them your symptoms.
