Let's share gluten/soy free recipes

Another member asked how to start the gluten/soy free diet. I thought I had celiac last spring, since the dumb endos said I did not have thyroid disease, so I researched the gluten/soy free diet. Here's what I found. Also, I will share my salsa recipe. Other members, please share your recipes.

Some things I like to eat. I have to take a Lactaid for milk:
-GE Honey nut Chex cereal
-Bob's Red meal gluten free pancake mix
-Eggs
-I believe bacon is okay. Check the label with the foods you can't eat on the quick start diet guide.  
-I believe Hebrew National hot dogs are okay, but buns are out.
-Chicken breast (no breading) broiled with seasoning on top of salad. Most vinegar dressings are gluten free, but check for soy. Many Hashi sufferers shouldn't have soy.
-Nachos with refried beans (check the bean label), guacamole, sour cream, cheese, salsa- Most corn chips and corn tortillas are gluten/soy free. Check the label. I use Tostito's Naturals tortilla chips.
-Tacos, but check the taco seasoning to make sure you're not using a product with gluten. If so, you can use salsa and season salt to season. Check the labels. I make my own salsa.  
-If you don't have a health store nearby, you may need to bake your own gluten free bread.
-I have Gluten free bread mix, found in the health aisle of my local grocery store.
-Loads of fruit, nuts and veggies (avoid uncooked broccoli and cabbage, as they affect absorption of your meds)
-Pamela's chunky chocolate chips are awesome! I could eat those all day.
-Betty Crocker has a new line of cakes, brownies, cookie mixes gluten free. I haven't seen them at my local store, so I don't know if they are soy free.
-Homemade soup, but avoid bouillon. They have gluten. Use garlic, onions, etc for flavor. Corn starch to thicken the broth, not flour.  
-Loaded baked potato with sour cream, cheese, bacon. Potato starch, just like corn starch, is okay.
-Certain ice cream (Is it Dreyers or Breyers that is all natural?)

Here's my salsa.

Large Can tomatos, diced, but not cooked, no added seasoning.
Chopped bunch of green onion
Chopped garlic (3-4 cloves)
1/2 fresh squeezed lime
Fresh cilantro to taste
Salt to taste

Hubby likes a fresh chopped jalepeno, but I don't add it to mine.
Blend it or eat it chunky.
Hubby likes to grill it on low heat in a disposable tin over wood chips for about an hour.
Mix everything and enjoy with your favorite gluten/soy free corn chips. My favorite is the yellow Tostito's Naturals.
Blend some salsa and sour cream with avocado for fresh guacamole.
