Celiac but not celiac plus other unexplained symptoms

Throughout my life I've had many issues and, at 34, they're not going anywhere. And having been told I'm essentially osteoperotic I really need to work out what is going on...it feels like it may all be related but no one can work out why or what.  So if I list everything out here, are there bods around who can help discuss?

I have a long history of doctors thinking I'm celiac. All endoscopys have come back fine, but it's always been their go to. (I took myself off gluten for a while...it did help with the gut, but does seem to come back and I'm not always able to explain it when it does...so it's either not or I'm very sensitive)

Almost constantly constipated

Bloating pretty severe

Occasional diarreah (I describe it as my body having a clear out)

Fatigue

Constantly dehydrated, despite drinking regularly and plenty

Itchy skin

Dry eyes

Dry mouth

Ridiculously dry nose...crusty, usually blood clots coming out

Low bone density (recent scan after 2 unexplained breaks)

After intense exercise (like 2 minutes on the rowing machine) I go dizzy to the point of feeling like I'm going to pass out.

To me a lot of these feel connected...i just don't have enough knowledge or googling power to work it out (and it keeps leading back to celiac anyway...which it isn't, or at least not in its classic form...).
