Lime chicken stir-fry

You will need
* 1 tablespoon olive oil
* 1 onion, roughly chopped
* 300g basics chicken breast pieces
* 1 vegetable stock cube
* 3 loose limes
* 1 teaspoon sugar ( I left this out as i dont mind it tangy)
* 400g pack beansprouts
* 385g stir fry egg noodles
* 2 teaspoons soy sauce
1. Heat the olive oil in a wok or large frying pan, then add the onion, and fry until soft. Add the chicken breast pieces and cook for a further 5 minutes until browned. Remove chicken and set aside.
2. Make up 200ml vegetable stock made with a whole stock cube, the juice of 1 lime and the sugar, and cook until half the stock has been absorbed.
3. Return the chicken to the pan and simmer for a further 2 minutes until the chicken is piping hot throughout. Add the beansprouts and egg noodles and heat through. Add 2 teaspoons soy sauce and mix.
4. Stir through the zest and juice of another lime and garnish the noodles with lime wedges to serve.
