There are two things that come to mind with the letter "C" ...

Caring - Which is what all of you are about .. caring for each other and learning to care for yourself.  We can all help each other in this endeavor because learning to care about ourselves as much as we care for others is a huge tool in helping us in developing a better lifestyle journey.

Carpe Diem - Literally means "Seize the Day!"  Don't let another day go by ... begin or recommit to realizing your dreams and being the best YOU that you can be!

C for me means Courage,
What is courage? What defines a courageous act? It is said that the brave and cowardly person are both fearful. However, it is the brave one who faces his fear and does what needs to be done. We will be faced with many things that scare us throughout our lives. How can we become the kind of people that face our fear and do it anyway? Human growth takes place when we take small steps. Each time we face our fears we become more of the courageous people that we would like to be.  

Courage is the strength to stand up
When it's easier to fall down and lose hold.

It is the conviction to explore new horizons
When it's easier to believe what we've been told.

Courage is the desire to maintain our integrity
When it's easier to look the other way.

It is feeling happy and alive, and moving forward
When it's easier to feel sorry for ourselves and stay.

Courage is the will to shape our world
When it's easier to let someone else do it for us.

It is the recognition that none of us are perfect
When it's easier to criticize others and fuss.

Courage is the power to step forward and lead
When it's easier to follow the crowd; their pleas resound.

It is the spirit that places you on top of the mountain
When it's easier to never leave the ground.

The foundation of courage is solid,
The rock that doesn't roll.

Courage is the freedom
Of our mind, body, and soul!

C is for carrot.  Carrots are an excellent source of antioxidant compounds, and the richest vegetable source of the pro-vitamin A carotenes. Carrots' antioxidant compounds help protect against cardiovascular disease and cancer and also promote good vision, especially night vision.

C is also for Compassion.  It is difficult sometimes to have compassion on ourselves, yet somehow very easy to have it for others.  Without the Caring and Compassion that I have received from my friends I'm just not sure what I would do!

C is for Consistency

I have found that the main reason I've been able to lose weight unlike all the other times is because I've been consistent. There are a lot of things that work. Different diets and exercise programs but if your not consistent you won't see any results. With that said, I'm not perfect but I've been more consistent than not and I believe it has gotten me through this better than ever before.

C is for chicken.  

Chicken is one of the safest meat available and it is the most widely consumed meat on the planet, Chicken in packed with vitamins and nutrients that are essential for positive health. but we need to take some care before eating chicken.

Unhealthy parts of a chicken
Chicken is white meat which tastes good and almost every one like the taste of chicken, but we need to remove the unhealthy eatable parts of chicken before preparing it, Chicken skin contains majority of ( 3/4) chicken fat, its advised to completely remove the chicken skin before preparing, chicken meat with out skin is low calorie, low carb food packed with protein, even if chicken liver is packed with lot of essential vitamins it is high in cholesterol and it is one of the  stuffs that contains very high amount of  LDL ( bad cholesterol ) for those who care for their cholesterol levels should throw chicken liver into the deepest corner of their trash bin.

Chicken meat is power packed with proteins it makes one of the favorite food for body builders due to its muscle building potential. skinned chicken meat is very low in fat if we compare it with other meats. Chicken is a good source of niacin, B-6, B-12, vitamin D, iron and zinc which is essential to maintain a healthy body.  Consuming chicken helps to slow down aging, trance mineral selenium found in chicken is an anti aging component. Selenium is of fundamental importance to human health. It is an essential component of several major metabolic pathways, including thyroid hormone metabolism, antioxidant defense systems and immune function. Evidence from prospective studies, intervention trials and studies on animal models of cancer have suggested a strong inverse correlation between selenium intake and cancer incidence.

I use a lot of chicken breasts and thighs in my cooking.  In addition to chicken curry (one of my most fav dishes) I like to make chicken paillards.  Pound a breast flat between two pieces of plastic wrap, then dip in seasoned flour, a lightly beaten egg or egg white, and then dip in panko bread crumbs with maybe a bit of freshly grated parmesan cheese in it.  Spray a flat pan with spray (or lightly oil with canola or olive oil) and bake at 350 for 20 - 30 minutes.
