One thing that I find extremely easy to make for lunch (if I do not have leftovers from the meal the evening before) is some of the various soups available.  Campbell's has a healthy line with low sodium, as does Progresso.  Depending upon the variety of soup (they generally have 2 servings) you can have the entire can for about 250 calories or so.  I find this to be very easy, as I just have to open the soup and warm it up, yet still feel good about my choice.  I prefer to have homemade soup, but I don't always have some leftover, so I keep some of these on hand.

I also enjoy wraps made with whole wheat tortilla and chicken or turkey sliced, some lettuce and maybe a few other veggies such as bell pepper slices, tomato slices, etc.  I don't care for dressing and this makes a good fulfilling lunch for me.
