It sounds like you might just need to ask whomever does your cooking to try not to use a lot of fat for food preparation and add lots of fresh fruits and veggies, plus watch your portion sizes, along with staying active. You can do a web search for sites that will help you calculate how many calories you require daily and also how much various foods have per portion (such as a portion of mashed potatoes might be 1/2 cup and how many calories are in it)
Even though you walk everywhere you go, that might not be enough activity to use up the calories you are taking in. In order to lose weight, you have to use more calories than you take in.

What kind of "carb diet" are you referring to? Are you talking about low carb?
You don't say how much weight you need to lose. You need to figure out how many calories you need daily, watch your portion sizes and get a good balance of all of the food groups. The less sugar and refined foods (white bread, rice, etc) you eat the better. But remember that not all carbs are bad for you.
You also don't mention whether or not you exercise. If not, walking is always a good way to start.
