I have some food allergies and an intolerance to gluten (but not Celiac disease)... and I don't eat meat ! I eat salads, Mexican food and buy gluten free frozen products often at local health food stores.
Can you drink soy milk ? What happens when you have any dairy products ? I do know that there is a homeopathic remedy for dairy allergies and it actually worked for my husband. He used to get these huge welts after drinking milk and after several treatments with this remedy, the welts disappeared and he was able to tolerate dairy products again.
There are gluten free breads available in health food stores. They also sell rice flour, garbanzo bean flour and other gluten free flours. I don't have any problem with corn flour and can eat Mexican food (tostados, enchiladas, etc).
You may want to look into the Marshall Protocol as a possible treatment for your Hashimoto's Thyroiditis and Celiac disease. The protocol is a research protocol but the medications are not research medications. I'm currently being treated for CFS on the protocol and believe I am getting better. The website moderators also posts members success stories online and some of them are quite amazing, as well as reading members' progress notes. I've made friends with few of the members doing the same protocol and we often keep in tough and how we are doing. Before I started the protocol, I had an intolerance to gluten (common in CFS patients) and now I'm able to tolerate wheat.
CFS stands for chronic fatigue syndrome. The name "chronic fatigue syndrome" doesn't do this illness justice. I know originally I was told by one of my physicians that I had lupus. The real name for this illness was and still is in many countries: myalgic encephalomyelitis. In addition to having CFS, I also have a positive ANA titer --- 1:640. Dr. David Bell said that up to 25% of CFS patients have some autoimmunity problems... so I'm assuming that I'm one of them.
I know the MP doesn't have a user friendly website. ; ^ ) There is some really good information in there and it is important to read everything. This is a research protocol, but as I said... the medications are not research medications. The protocol began treating people in 2004 and the success stories are now coming out. Dr. Marshall saved his own life with this protocol... he has (or had) sarcoidosis. This protocol takes years and hard work. I know it is working for me not only because I can tolerate wheat now and my POTS (postural orthostatic tachycardia syndrome) is better, but also because I feel lousy when I take the medication. It is the die-off reaction from the bacteria dying that makes me feel worse.

Good luck with the new diet ! I'm not pushing it with the wheat because I need my immune system to fight this illness and make this treatment successful. So I normally go without wheat, but am able to cheat every so often now. Before I started the protocol, if I did that... I would be very ill for 2 weeks after eating anything with gluten in it.
