I have both anxiousness and irritability (mostly irritable).  I have not been diagnosed Celiac, but I have the main gene and gluten-free diet worked.

I get both when I get "glutenized" which for me results in a big pain in my right side which is a major pain in my arse!

Yes, gluten causes me to feel anxious, sometimes very much so.  I could tell from the time of my first very sudden onset of celiac symptoms that the sudden quite intense feelings of anxiety were somehow being generated by my intestine, but I had no idea why until I was diagnosed two months later with Celiac disease by both blood tests and biopsy.  My doctor says it is quite unusual that I can tell that my anxiety is caused by a physical problem in my intestine, but I can tell that it is, and it went away after being gluten free for several months and only returns temporarily when I am exposed to gluten.  For some unknown reason I seem to perceive pain in the part of my intestine effected by celiac disease as anxiety.  For further details, please see my first response on March 18 to longhaul195 at http://www.medhelp.org/posts/show/467920.
