I have had a problem over the past two months that has involved 2-3 coughing spells per day. One usually occurs after I get out of the shower, and the others frequently occur after I eat. The spell usually is preceded by constantly trying to clear my throat,and the feeling of a lot of mucus in the throat. Usually by the end of the 5-10 minute spell, I usually gag anywhere from once to three times, and I haven't seen any benefits from antihistamines or mucinex. Any thoughts on what this can be? I was diagnosed with sarcoid 2 years ago and don't know if this could be a symptom.

It is possible that you have a non-allergic inflammation of the sinus area or have developed allergies and experiencing postnasal drainage.  This can cause everything you are describing.  It is possible that sarcoidosis could cause a nonspecific inflammation and lead to this.  It is certainly not the only cause.  An inhaled nasal steroid might be an option to discuss with your doctor.
