Why am I itching?

I have had itchy skin since I was 12 after a hospital stay with lots of antibiotics. I am now 29 and nobody knows the answer so please help. When I eat any kind of carbohydrates (including veggies or fruits) then the itchiness becomes uncontrollable and gets worse. I currently avoid most carbs but manage the itching by tanning....(don't know why). My vitamin D levels are very good, it is not formication, or parasites. I get itchy skin but my skin is visibly normal with no rash of any sort. I will get tiny little unoticeable bumps on my face and chest when it gets really bad.
Any theories because I am desperate to understand this?
