how can i encourage my 21 mo. old to eat regular food?

My son is 21 mo. old and I cannot get him off of baby food - I repeatedly try to offer a variety of foods, but he cannot get over his issue w/ appearance or texture.  He loves crunchy things (i.e. toast, crackers, cookies, etc.) and will eat creamy things such as yogurt, but nothing in between.  He gags on literally everything, and so I feel obligated to continue w/ the baby food to ensure adequate nutrition.  Any advice would be helpful.
