my sinusus seem to not be producing any mucus and the back of my throat is dry and scratchy and feels like something fuzzy growing back there/ What could it be

You could have infection of the throat caused by bacteria, a virus or a fungus called Monilia that causes the white patches of "thrush".  A viral infection will resolve spontaneously.  A bacterial or fungal infection will respond to appropriate therapy.  If not gone within a week, you should have your throat examined and treated.
