Trial and error is the order of the day for celiac sufferers. Keep you diet as plain as possible. ANything frozen or processed foods will contain some kind of food preservative which more than likely contain some kind of gluten and while the product may not list "gluten" as an ingrediant some companies have some kind of fancy scientific name that we do not understand that is listed.
Fresh fruits, vegetables, all fresh meat is good. There is a great bread called "glutino" that you can order off the internet. The cinamon-raisin bread is fantastic. The regular bread is great toasted.
I too am just beginning my journey in finding out what I can/can't tollerate. I notice that when I eat the way I';m supposed to I feel great. If I eat a hamburger or some pasta..I pay the price for a few days. I'm getting older now and am just not wiling to go through that fight anymore. Lactose Intollerance also goes along with celiac. If you notice the above sypmtoms after eating any kind of dairy good chances are you too are lactose intollerant. THIS ***** but can be overcome.
Eating out at restaurants get really difficult as well. Grilled chicken salad is about the extent of my menu selections...maybe I'll get a baked potatoe if they have one.

It has taken me over twelve years and I know which foods would give me pain so I totally eliminated those from my diet but seeing that i just found out about the Celiac and Gluten Free Diet, am still learning what to eat.
It is a long road..with ok days and days when it is like taking so many steps backwards that I wonder if it has anything to do with my diet.
I was checked for neuropathy and everything was fine...every tests that I take comes up normal..lol but yet still I feel lousy just like that.
I google this Dr. and am going to try getting an appointment with him..I have to write an essay and mail to him before getting to schedule an appointment(Dr.Thomas Bolte).
Keep writing and giving me information on the Celiac and Gluten.

I pray every day that the good Lord would help me find exactly what is wrong and what makes me feel so sick with my stomach.
Immediately upon feeling sick..I go to the bathroom over and over but yet still not one of the doctors I have been to so far can figure out what's wrong with me.
I did the gene testing and when the results came in my PC called me in to discuss the results...he told me that I have a trace of Celiac but when I saw the report...it is the same as the other blood work that I did for Celiac. I called the Lab and they acknowledged that they did not do a complete gene testing so I had to go back for them to draw more blood...I called my doctor's office and he said that the results were the same..am waiting for him to mail it to me....so so frustrated right now.
I am going to see a new GI doctor next Wednesday...hopefully he might think outside the box.
