We shall be dining on Oven Fried Eggplant.
I'm on an Eggplant kick this week, only apparently there are no eggplants to be had in our area. I had to get Japanese eggplants the other day, which seemed much the same to me as regular ones.
1/2 cup low fat mayo
1 T minced onion
1 lb unpeeled (I'll probably peel it) eggplant, sliced into about 12 (1/2 in) slices
1/3 cup fine dry breadcrumbs
1/3 cup grated Parmesan Cheese
1/2 tsp dried Italian seasoning
Cooking spray
1. Combine first 2 ingredients, stir well
2. Spread evenly over both sides of the eggplant slices
3. Combine breadcrumbs cheese, and italian seasoning in a shallow bowl, dredge slices in breadcrumbs
4. Place on baking sheet sprayed with cooking spray
5. Bake at 425 for 12 min
6. Turn eggplant over; back an additional 12 min or until golden. (some people had to broil it for a minute at the end)
This had 135 great reviews on Recipezaar, so I'm thinking it will be pretty good. I'll be having a nice salad with it, possibly some breadsticks.
